Cooking oil (vegetable oil)for frying plus 1 tbsp (about 3 1/2 tbsp in all)
Onion2, sliced
Carrot1, in chunks
Potato1 large, in chunks
Apple½ small, grated
Water3 cups
Butter2 tbsp
Maida (all-purpose flour, plain flour)½ cup, divided
Curry powder2 tbsp
Garam masala½ tsp
Tomato ketchup (ketchup)1 tbsp
Soy sauce2 tsp
Honey1½ tsp
Salt1 tsp, divided
Chicken, boneless2 breasts, butterflied and flattened
Egg1, beaten
Breadcrumbs1¼ cups panko
Short grain rice (sushi rice)1¼ cups, cookedMethod
- 1Fry onion in 1 tbsp oil until deep golden. Add carrot, potato, apple and water and simmer until tender.
- 2Cook butter and 40 g flour into a light brown roux, then stir in curry powder and garam masala.
- 3Whisk the roux into the pot with ketchup, soy, honey and half the salt. Simmer 10 minutes, blending smooth if you like.
- 4Season the chicken, coat in flour, egg and panko and fry until golden and cooked through with no pink.
- 5Slice the cutlet and lay it over rice. Pour curry over half, leaving some crust uncovered.
