Ingredients

4 servings
Chicken, boneless400 g, minced
Onion1 small, finely chopped
Ginger garlic paste1 tbsp
Green chilli2, minced
Garam masala½ tsp
Lemon juice2 tsp
Saltto taste
Egg3, divided
Cornflour (cornstarch)1 tbsp
Breadcrumbs1 cup
Cooking oil (vegetable oil)for frying, about 6 tbsp absorbed

Method

5 steps
  1. 1Mix chicken with onion, ginger garlic, chilli, garam masala, lemon, salt and 1 egg; shape into 4 flat oval cutlets.
  2. 2Coat in breadcrumbs, pressing well, and chill 20 minutes.
  3. 3Fry in hot oil until golden and cooked through with no pink.
  4. 4Whisk the remaining eggs with cornflour and a pinch of salt. Drizzle in thin streams into hot oil with your fingers to make a lacy net, lay a cutlet on it and fold the net over.
  5. 5Drain and serve hot.
Serve it like this

Serve on a plate with kasundi, sliced onion, cucumber and a lemon wedge. Hot.
