Ingredients

4 servings
Button mushroom400 g button mushrooms, halved
Potato1 large, cubed
Green peas⅓ cup
Cooking oil (vegetable oil)2 tbsp, mustard oil if you like
Cumin seeds½ tsp
Bay leaf (indian bay leaf)2
Onion1 large, chopped
Ginger garlic paste1 tbsp
Tomato1 large, chopped
Turmeric (ground turmeric)½ tsp
Kashmiri chilli powder1 tsp
Cumin powder (ground cumin)1 tsp
Coriander powder (ground coriander)1 tsp
Saltto taste
Water¾ cup
Garam masala½ tsp

Method

4 steps
  1. 1Heat oil, add cumin and bay leaves, then the potatoes. Fry until lightly golden.
  2. 2Add onion and fry until golden, then ginger garlic paste, tomato and the powdered spices. Cook until oil separates.
  3. 3Add the mushrooms and salt and cook on high until they release water and it dries.
  4. 4Add peas and water, cover and simmer until the potatoes are done. Finish with garam masala.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
