Ingredients

Maida (all-purpose flour, plain flour)1 cup
Milk1 cup
Egg3
Butter2 tbsp, melted, divided
Saltpinch
Ricotta2 cups (or farmer cheese)
Cream cheese¼ cup
Egg yolk1
Sugar3 tbsp
Vanilla essence (vanilla flavouring, imitation vanilla extract)½ tsp
Lemonzest of 1
Sour cream½ cup, to serve
Fruit jam (jam or preserves)¼ cup, to serve

Method

5 steps
  1. 1Whisk flour, milk, eggs, salt and 1 tbsp melted butter into a thin, smooth batter. Rest 20 minutes.
  2. 2Pour a thin layer into a lightly buttered pan, swirl and cook on one side only until the top is dry. Stack on a plate.
  3. 3Beat ricotta, cream cheese, yolk, sugar, vanilla and lemon zest until smooth.
  4. 4Put a spoon of filling on the cooked side of each crêpe, fold in the sides and roll into neat parcels.
  5. 5Fry seam side down in the remaining butter until golden, then turn.
Serve it like this

Serve two per plate, golden side up, with a spoon of sour cream and jam or fresh berries.
