Cheese and potato pie, Lancashire style.

Ingredients

4 servings
Potato1 kg floury potatoes, peeled and chunked
Onion1 onion, finely chopped
Butter2 tbsp
Milk¼ cup
Cheddar cheese2 cups grated Lancashire or mild cheddar
Prepared mustard1 tsp mild mustard
Saltto taste
Tomato2 tomatoes, sliced

Method

5 steps
  1. 1Boil the potatoes in salted water until very tender, adding the onion for the last 5 minutes.
  2. 2Drain well and mash with the butter, milk and mustard.
  3. 3Stir in two thirds of the cheese and season.
  4. 4Spread in a dish, lay the tomato slices on top and scatter the remaining cheese.
  5. 5Bake at 200C until golden and crisp on top.
Serve it like this
