Ingredients

Chicken, curry cut (bone in chicken, small pieces)500 g bone in pieces
Chicken mince (ground chicken)250 g, for meatballs
Ginger1 tbsp grated
Egg1, for meatballs
Cornflour (cornstarch)1 tbsp
Chicken stock (chicken broth)6 cups
Soy sauce3 tbsp
Sugar2 tsp (or mirin)
Salt1 tsp
Napa cabbage (wombok, chinese leaf)⅓ head
Radish (daikon radish, mooli)in thin half moons
Carrotin slices
Firm tofu300 g, in cubes
Button mushroommixed
Aburaage1 sheet, in strips
Spring onion (green onion, scallion)in pieces
Udon noodlesto finish

Method

5 steps
  1. 1Mix the minced chicken with ginger, egg, cornflour and a pinch of salt for meatballs.
  2. 2Bring the stock to a simmer with soy, sugar and salt. Add chicken pieces, radish and carrot and simmer 20 minutes.
  3. 3Spoon in the meatballs and simmer 5 minutes.
  4. 4Add cabbage, tofu, mushrooms, aburaage and spring onion and cook 5 minutes until everything is cooked through.
  5. 5When the pot is nearly empty, cook the udon in the broth.
Serve it like this

Bring the pot to the table on a burner, ladle into deep bowls and finish with the udon at the end.
