Salmon1 side, skin on
Brown sugar2 tbsp
Soy sauce1 tbsp
Prepared mustard1 tbsp Dijon
Lemon1, zest and slices
Garlic2 cloves, grated
Dill leavesa handful
Black pepper½ tsp
Salt½ tsp

- 1Soak an untreated cedar plank in water for at least 1 hour.
- 2Mix sugar, soy, mustard, garlic, lemon zest, oil and pepper.
- 3Lay the salmon skin down on the plank, season and spread with glaze. Top with lemon slices and dill.
- 4Grill over medium indirect heat with the lid closed, or bake at 200°C, for 15 to 20 minutes until the fish flakes.
Serve it like thisServe the salmon right on the plank at the table, with lemon wedges. Roasted potatoes and a green salad alongside.
