Filipino cassava cake.

Ingredients

12 servings
Tapioca900 g fresh cassava, peeled and finely grated
Thick coconut milk1⅔ cups
Condensed milk (sweetened condensed milk)⅔ cup
Evaporated milk¾ cup
Egg2
Sugar½ cup
Butter3 tbsp, melted
Processed cheese (american cheese)½ cup, grated, for the top

Method

5 steps
  1. 1Squeeze a little liquid from the grated cassava if very wet.
  2. 2Mix the cassava with most of the coconut milk, the evaporated milk, eggs, sugar, butter and half the condensed milk.
  3. 3Pour into a greased tin and bake at 180°C for 45 minutes until set.
  4. 4Mix the remaining coconut milk and condensed milk, spread on top, add the cheese and grill 5 to 8 minutes.
  5. 5Cool completely before slicing.
Serve it like this

Cut into squares and serve at room temperature on banana leaf.
