Ingredients

4 servings
Pasta400 g tonnarelli or spaghetti
Pecorino Romano1¼ cups, very finely grated
Black pepper1 tbsp, coarsely cracked
Salta little, for the pasta water

Method

4 steps
  1. 1Boil pasta in lightly salted water, using less water than usual so it turns starchy. Keep 2 cups of it.
  2. 2Toast the cracked pepper in a dry wide pan for a minute, then add a ladle of pasta water.
  3. 3Mash the pecorino with a few spoons of warm (not boiling) pasta water into a thick cream.
  4. 4Add the pasta to the pepper pan, toss for a minute, take off the heat, then add the cheese cream and toss hard, loosening with water.
Serve it like this

Serve in warm bowls with a final shower of pecorino and pepper. Eat immediately; this sauce waits for no one.
