Classic black bean brownies.

Ingredients

Black beans, dry1 can (about 1 1/2 cups cooked), drained and rinsed
Cocoa powder (unsweetened cocoa powder)⅓ cup
Rolled oats (porridge oats)½ cup rolled oats
Maple syrup⅓ cup
Cooking oil (vegetable oil)3 tbsp
Flax seeds (linseed)1 tbsp ground
Water2 tbsp, for the flax
Vanilla essence (vanilla flavouring, imitation vanilla extract)½ tsp
Baking powder1 tsp
Salta pinch
Dark chocolate (bittersweet chocolate)⅓ cup chopped or chips

Method

4 steps
  1. 1Heat the oven to 180°C and line an 20 cm square tin. Mix the flax with water and rest 5 minutes.
  2. 2Blend the beans, cocoa, oats, maple syrup, oil, flax gel, vanilla, baking powder and salt until completely smooth.
  3. 3Fold in most of the chocolate, spread in the tin and scatter the rest on top.
  4. 4Bake until the edges are set and the centre is just firm. Cool completely before cutting.
Serve it like this

Cut into squares, dust with cocoa and serve with berries or a scoop of nice cream.
