Ingredients

8 servings
Glutinous rice (sweet rice)2 cups, soaked 1 hour
Water2 cups
Thin coconut milk¾ cup
Pandan leaves2 leaves
Thick coconut milk1⅔ cups coconut cream
Brown sugar1 cup muscovado or brown sugar
Salta pinch

Method

4 steps
  1. 1Cook the soaked rice with the water, thin coconut milk and pandan for 20 minutes until just tender.
  2. 2Simmer the coconut cream with the brown sugar and salt for 15 minutes until thick. Keep a few spoons for topping.
  3. 3Fold the rice into the caramel and cook, stirring, 10 minutes until very sticky.
  4. 4Press into a greased tray, spread the reserved caramel on top and grill briefly to caramelise. Cool before cutting.
Serve it like this

Cut into squares and serve on banana leaf, with latik or toasted coconut on top.
