Ingredients

Brinjal (eggplant, aubergine)4 medium
Saltto taste
Olive oil4 tbsp, divided
Peanuts¼ cup
Sesame seeds1 tbsp
Fresh grated coconut3 tbsp
Goda masala2 tsp
Kashmiri chilli powder1 tsp
Jaggery2 tsp
Onion2 large, sliced
Garlic5 cloves, sliced
Turmeric (ground turmeric)¼ tsp
Tomato3, chopped
Tamarind2 tsp pulp
Coriander leaves (cilantro)a handful, chopped
Water½ cup

Method

6 steps
  1. 1Peel the brinjals in stripes, salt them and rest 15 minutes. Pat dry.
  2. 2Fry the brinjals in 2 tbsp oil on medium heat for 8 minutes, turning until golden all over and starting to soften.
  3. 3Dry roast the peanuts, sesame and coconut on low heat for 4 minutes. Crush coarsely with the goda masala, chilli, jaggery and a pinch of salt.
  4. 4Heat the remaining oil on medium heat. Cook the onions 10 minutes until soft and sweet, add the garlic and turmeric for 1 minute, then the tomato and tamarind for 5 minutes. Stir in half the crumble and the coriander.
  5. 5Slit each brinjal lengthwise, open it up and pack in the filling. Lay in a baking dish, top with the rest of the crumble and pour the water around. Cover with foil.
  6. 6Bake in the oven at 180°C for 30 minutes, uncover and bake 10 minutes more. Rest 15 minutes.
Serve it like this

Set one brinjal on a plate with its filling showing, spoon the pan juices around it, and finish with coriander and a crumble of toasted peanuts.
