Ingredients

4 servings
Chicken, curry cut (bone in chicken, small pieces)1 whole chicken, about 1.5 kg
Lager beer (lager)1 can, half poured off
Paprika1 tbsp
Brown sugar1 tbsp
Garlic1 tsp garlic powder
Dried thyme½ tsp
Red chilli powder (indian red chili powder)½ tsp
Black pepper1 tsp
Cooking oil (vegetable oil)1 tbsp
Salt2 tsp

Method

5 steps
  1. 1Pat the chicken dry, rub with oil and the spice mix inside and out.
  2. 2Open the can, pour off half and add a pinch of the rub into it.
  3. 3Lower the chicken onto the can so it sits upright, legs forming a tripod.
  4. 4Grill over indirect medium heat, lid closed, until the thigh reads 75 C.
  5. 5Lift off carefully, rest 10 minutes and carve.
Serve it like this
