Ingredients

12 servings
Honey¾ cup
Sugar150 g dough, 50 g glaze
Almonds1½ cups, chopped
Candied peel (tutti frutti or candied orange peel)⅔ cup, chopped
Maida (all-purpose flour, plain flour)3 cups
Cinnamon powder2 tsp
Nutmeg¼ tsp
Whole spicespinch of ground cloves
Brandy3½ tbsp kirsch
Lemonzest of 1
Baking soda (bicarb soda, bicarbonate of soda)½ tsp

Method

4 steps
  1. 1Warm honey and 150 g sugar until dissolved; do not boil.
  2. 2Stir in almonds, peel, spices, zest and kirsch, then flour and soda. Knead to a stiff dough.
  3. 3Roll 1 cm thick on a lined tray and bake at 200 C.
  4. 4Boil remaining sugar with a little water to a syrup, brush over while hot, then cut into rectangles.
Serve it like this
