Beef1 kg chuck or cheek, large chunks
Dried guajillo chilli4
Chipotle in adobo2 chipotles with sauce
Onion1, chopped
Garlic6 cloves
Vinegar2 tbsp
Lemon juice1½ tbsp lime juice
Cumin powder (ground cumin)1 tsp
Dried oregano1 tsp
Whole spices3 cloves, 1 cinnamon stick
Bay leaf (indian bay leaf)3
Cooking oil (vegetable oil)1½ tbsp
Water1 cup
Saltto taste
Corn tortilla18 small tortillas
Coriander leaves (cilantro)chopped

Method

5 steps
  1. 1Soak the guajillos in hot water for 15 minutes, then blend with chipotle, half the onion, garlic, vinegar, lime, cumin, oregano and cloves.
  2. 2Brown the beef in oil in a pressure cooker, then add the sauce, bay, cinnamon, salt and water.
  3. 3Pressure cook for 8 whistles, then simmer on low 15 minutes. Let pressure release naturally.
  4. 4Shred the beef in the pot and let it soak up the juices for 10 minutes.
  5. 5Serve in warm tortillas with chopped onion, coriander and a cup of the broth on the side.
Serve it like this

Spoon shredded barbacoa into doubled tortillas, top with onion and coriander, and serve with a cup of hot broth and lime.
