White maize meal (white cornmeal, maize meal)400 g corn dough or maize meal, fermented
Tapioca250 g fresh cassava, grated and fermented with the corn

Okra (lady's finger)400 g, sliced
Fish400 g tilapia or smoked fish
Prawns (shrimp)200 g
Dried salted fisha little smoked or fermented fish (momoni)
Red palm oil4 tbsp

Scotch bonnet chilli (habanero or scotch bonnet pepper, habanero chilli)2

- 1Mix the fermented corn and cassava dough with water and salt into a smooth slurry.
- 2Cook over medium heat, stirring hard with a wooden paddle, until thick, smooth and stretchy, about 20 minutes.
- 3Fry onion in palm oil, add tomato, pepper, momoni and stock cube and cook 10 minutes. Add fish and prawns.
- 4Add okra and cook 5 minutes, stirring gently.
