Ingredients

4 servings
Maida (all-purpose flour, plain flour)2½ cups
Cooking oil (vegetable oil)3 tbsp
Baking powder1 tsp
Water¾ cup warm
Saltto taste
Rajma, dry (dried red kidney beans)refried red beans, from 3/4 cup dry
Queso fresco1 cup, crumbled
Sour cream½ cup

Method

4 steps
  1. 1Knead maida, oil, baking powder, salt and water into a soft dough. Rest 20 minutes.
  2. 2Stretch balls into thick 20 cm tortillas.
  3. 3Cook on a hot tawa until puffed and spotted.
  4. 4Spread with beans, sprinkle cheese, add cream and fold in half.
Serve it like this

Serve folded on a plate, two per person, with hot sauce and coffee.
