Ingredients

4 servings
Porkpork shoulder, thinly sliced
Thin coconut milk½ cup
Garlic6 cloves, minced
Jaggery1½ tbsp
Soy sauce1 tbsp
Fish sauce1 tbsp
Cooked rice4 plates broken or jasmine rice
Cucumber1, sliced
Carrot1, julienned
Radish (daikon radish, mooli)1 small, julienned
Vinegar3 tbsp
Sugar1½ tbsp
Salt½ tsp

Method

4 steps
  1. 1Marinate pork with coconut milk, garlic, jaggery, soy and fish sauce for at least 1 hour.
  2. 2Quick pickle carrot, radish and cucumber in vinegar, sugar and salt for 20 minutes.
  3. 3Grill over charcoal or in a hot grill pan, basting, until caramelised and cooked through.
  4. 4Serve on rice with pickles.
Serve it like this

Lay pork slices over a mound of rice with the pickles in a small dish. A bowl of clear broth on the side is traditional.
