Ingredients

4 servings
Chicken, curry cut (bone in chicken, small pieces)1 small whole chicken, about 1.2 kg
Gingera big thumb, half sliced, half finely grated
Spring onion (green onion, scallion)a bunch, half whole, half finely chopped
Waterto cover
Salt1 tbsp
Ice cubesfor an ice bath
Cooking oil (vegetable oil)3 tbsp, smoking hot
Sesame oil1 tsp

Method

  1. 1Bring a large pot of water to the boil with sliced ginger, whole spring onions and most of the salt.
  2. 2Lower in the chicken, return to a simmer, then turn the heat to very low and poach 30 minutes, lifting and draining the cavity twice.
  3. 3Check the thigh: juices should run clear with no pink. Plunge into iced water for 10 minutes.
  4. 4Mix the grated ginger, chopped spring onion and remaining salt. Pour over the smoking hot oil and add sesame oil.
  5. 5Brush the chicken with sesame oil, chop through the bone into pieces and serve at room temperature with the sauce.
Serve it like this

Arrange the chopped chicken back in its shape on a platter, skin up, with the ginger scallion oil in small dishes and plain rice.
