Palm sugar (gula melaka)1½ tbsp

- 1Blend the shallots, garlic, ginger, chillies, lemongrass, turmeric and candlenuts. Fry in the oil for 5 minutes.
- 2Add the coconut milk, palm sugar, tamarind and salt and simmer 15 minutes until thick.
- 3Marinate the chicken in a third of the sauce for 1 hour.
- 4Grill over medium coals for 25 to 30 minutes, turning and splashing with more sauce, until charred and the juices run clear.
- 5Serve with the rest of the sauce, warmed.
