Ingredients

4 servings
Fish800 g monkfish or firm white fish, chunks
Soybean sprouts400 g
Water1 cup
Dried salted fisha few dried anchovies
Kombu1 small piece
Gochugaru¼ cup
Garlic8 cloves, minced
Ginger1 tsp, minced
Soy sauce1½ tbsp
Fish sauce2 tsp
Sugar1 tsp
Cornflour (cornstarch)2 tbsp in 4 tbsp water
Spring onion (green onion, scallion)4 stalks, cut
Sesame oil2 tsp
Sesame seeds2 tsp

Method

5 steps
  1. 1Simmer anchovies and kelp in the water 10 minutes and remove.
  2. 2Add the fish and steam covered 8 minutes.
  3. 3Pile the sprouts on top, cover and cook 5 minutes.
  4. 4Mix gochugaru, garlic, ginger, soy, fish sauce and sugar, stir in and toss gently.
  5. 5Stir in the cornflour slurry and cook until glossy; finish with spring onion, sesame oil and seeds.
Serve it like this

Heap on a large platter, sprouts and fish glistening with sauce, sesame on top; serve with rice and a bowl of cold water kimchi.
