Ingredients

4 servings
Maida (all-purpose flour, plain flour)1⅔ cups
Buttermilk1⅔ cups
Egg3, separated
Sugar1½ tbsp, plus for dusting
Baking soda (bicarb soda, bicarbonate of soda)½ tsp
Baking powder1 tsp
Cardamom½ tsp
Salta pinch
Butterfor the pan
Fruit jam (jam or preserves)to serve

Method

5 steps
  1. 1Whisk flour, sugar, raising agents, cardamom and salt. Add buttermilk and yolks and whisk smooth.
  2. 2Whip the whites to stiff peaks and fold in.
  3. 3Heat the pan on medium, add a little butter to each hole and fill almost to the top.
  4. 4When the edges set, turn each a quarter with a skewer, letting batter flow down. Keep turning until round and golden.
  5. 5Dust with sugar and serve with jam.
