Ingredients

4 servings
Pork500 g shoulder or belly, thinly sliced
Brown sugar¼ cup
Pineapple juice¼ cup
Soy sauce1 tbsp
Garlic8 cloves, half minced for rice
Kashmiri chilli powder1 tsp, or annatto, for colour
Salt1 tsp
Cooked rice4 cups, day old
Egg4
Cooking oil (vegetable oil)3 tbsp
Vinegarspiced vinegar, to dip

Method

4 steps
  1. 1Mix pork with sugar, pineapple juice, soy, half the garlic, chilli powder and salt. Cover and chill overnight.
  2. 2Simmer the pork with 1/2 cup water in a pan until the water evaporates, then fry in its own fat until caramelised.
  3. 3Fry the remaining garlic in oil until golden, add the rice and salt and toss until hot.
  4. 4Fry the eggs sunny side up and serve with tocino, garlic rice and vinegar.
Serve it like this
