Ingredients

4 servings
Fish8 koi fish, cleaned, or tilapia pieces
Turmeric (ground turmeric)1 tsp
Saltto taste
Mustard oil5 tbsp
Nigella seeds½ tsp kalonji
Onion1 medium, ground
Ginger4 cm, ground
Cumin powder (ground cumin)1½ tsp
Kashmiri chilli powder1 tsp
Green chilli5, slit
Sugar½ tsp
Water⅔ cup

Method

5 steps
  1. 1Rub the fish with turmeric and salt and rest 10 minutes.
  2. 2Fry the fish in very hot mustard oil until crisp. Lift out.
  3. 3In the same oil add kalonji and slit chillies, then the onion and ginger pastes. Fry until golden.
  4. 4Add cumin powder, chilli powder and a splash of water. Cook out the spices, then add the rest of the water, salt and sugar.
  5. 5Slip in the fish and simmer, covered, until the gravy coats them.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
