Beefsirloin, sliced very thin
Soy sauce2 tbsp
Lemon juice1 tbsp calamansi juice
Garlic16 cloves, half for tapa, half for rice
Jaggery1½ tbsp brown sugar
Black pepper½ tsp
Cooked rice2½ cups day old rice
Cooking oil (vegetable oil)2 tbsp

Vinegar2 tbsp, spiced, to dipMethod
- 1Marinate beef with soy, calamansi, half the garlic, sugar and pepper overnight in the fridge.
- 2Fry the rest of the garlic in oil until golden, add rice and salt and toss until hot and fragrant. That is sinangag.
- 3Pan fry the beef with its marinade until the liquid evaporates and the edges caramelise.
- 4Fry the eggs sunny side up. Plate tapa, rice and egg with tomato and vinegar dip.
Serve it like thisPlate a dome of garlic rice, lay the tapa beside it, top the rice with the fried egg, tomato slices on the side and spiced vinegar to dip.
