Classic sookhi urad dal.

Ingredients

4 servings
Urad dal (split black gram)1 cup dhuli urad
Water1½ cups
Ghee2 tbsp
Cumin seeds1 tsp
Asafoetidaa pinch
Ginger2.5 cm, julienned
Green chilli2, slit
Onion1 small, sliced
Turmeric (ground turmeric)¼ tsp
Red chilli powder (indian red chili powder)½ tsp
Dry mango powder½ tsp
Saltto taste
Coriander leaves (cilantro)chopped

Method

4 steps
  1. 1Rinse the urad dal and soak 30 minutes. Drain.
  2. 2Bring the water to a boil with turmeric and salt. Add the dal, cover and cook on low until just tender and the water is absorbed.
  3. 3Heat ghee, add cumin and asafoetida, then onion, ginger and green chilli. Fry until the onion is golden.
  4. 4Add chilli powder, then fold in the dal gently with amchur and coriander.
Serve it like this

Serve hot on a plate, with a few fresh coriander leaves on top.
