Ingredients

8 servings
Sugar1 cup
Water250 ml for syrup, rest cold to serve
Vinegar4 tbsp white wine or apple vinegar
Mint leavesa big bunch
Cucumber1 large, grated
Ice cubesplenty

Method

4 steps
  1. 1Simmer the sugar in 250 ml water until dissolved, then add the vinegar and simmer 20 minutes.
  2. 2Take off the heat, drop in the mint and cool. Remove the mint.
  3. 3For each glass, stir 3 tbsp syrup into 250 ml cold water with a spoon of grated cucumber.
  4. 4Serve over ice with mint.
Serve it like this

Serve in tall glasses over ice with grated cucumber and a mint sprig; offer extra syrup with lettuce leaves to dip.
