Masa harina1¾ cups
Maida (all-purpose flour, plain flour)¼ cup
Baking powder½ tsp
Water1¼ cups, warm
Turkey400 g turkey thigh or breast
Achiote paste2 tbsp
Orange juice¼ cup
Lemon1 lime, juiced
Garlic2 cloves
Cooking oil (vegetable oil)for frying, about 7 tbsp absorbed
Lettuce2 cups, shredded
Tomato2, sliced
Avocado1, sliced
Onion1 red onion, pickled
Scotch bonnet chilli (habanero or scotch bonnet pepper, habanero chilli)1 habanero

- 1Cook the turkey with achiote, orange juice, garlic, half the lime and salt, covered, until tender, about 35 minutes. Shred into its juices.
- 2Pickle the sliced red onion with the remaining lime, sliced habanero and salt.
- 3Mix masa harina, maida, baking powder, salt and water into a soft dough. Press 10 cm tortillas.
- 4Fry each raw tortilla in hot oil, pressing gently with a spatula, until puffed and pale gold.
- 5Drain and top with lettuce, turkey, tomato, avocado and pickled onion.
Serve it like thisServe on a large platter, three per person, with pickled onions piled high and a small bowl of habanero salsa.
