Ingredients

4 servings
Cooked rice3 cups, cooled
Mint leaves1 packed cup
Coriander leaves (cilantro)½ cup
Green chilli3
Ginger2.5 cm
Garlic3 cloves
Onion1 medium, sliced
Green peas½ cup
Whole spicescinnamon, cloves, bay leaf
Cooking oil (vegetable oil)1½ tbsp
Ghee1 tsp
Lemon juice2 tsp
Cashews6
Saltto taste

Method

4 steps
  1. 1Grind mint, coriander, green chillies, ginger and garlic to a smooth paste with very little water.
  2. 2Heat oil and ghee, fry cashews and whole spices, then onion until soft. Add peas and cook 3 minutes.
  3. 3Add the mint paste and salt and cook until the raw smell goes.
  4. 4Add rice and toss gently over low heat. Finish with lemon.
Serve it like this

Fluff gently with a fork and serve hot on a wide plate, with raita or a side next to it.
