Ingredients

4 servings
Maida (all-purpose flour, plain flour)4 cups 00 flour or maida
Water1⅓ cups, cool
Instant dry yeast1 tsp
Salt2 tsp
Tomato1 tin plum tomatoes, crushed
Mozzarella250 g
Spicy salami (pepperoni)120 g, thinly sliced
Dried red chillichilli flakes or fresh chilli
Olive oil1 tbsp

Method

4 steps
  1. 1Mix flour, water, yeast and salt into a soft dough. Knead 10 minutes, cover and rise until doubled (2 hours, or overnight in the fridge for better flavour). Divide into 4 balls and rest 30 minutes.
  2. 2Heat the oven to its maximum (250C or more) with a pizza stone or upturned heavy tray inside for 45 minutes.
  3. 3Stretch dough, spread tomato, add mozzarella and salami slices.
  4. 4Bake 7 to 9 minutes; finish with chilli and oil.
Serve it like this

Cut into wedges and serve hot with chilli oil and dried oregano at the table.
