Ingredients

6 servings
Maida (all-purpose flour, plain flour)2 cups
Instant dry yeast1 tsp
Water⅔ cup, warm
Olive oil3 tbsp, divided
Saltto taste
Onion1 kg, thinly sliced
Garlic2 cloves
Dried mixed herbs (italian seasoning)1 tsp thyme
Black olivesa handful, Niçoise
Anchovy fillets8 to 10 anchovy fillets

Method

4 steps
  1. 1Mix flour, yeast, salt, 1 tbsp oil and warm water into a soft dough. Knead and rise until doubled.
  2. 2Cook the onions in the remaining oil with garlic, thyme and a pinch of salt on low heat, covered, stirring now and then.
  3. 3Press the dough into an oiled tray. Spread with the onions, lay anchovies in a lattice and dot with olives.
  4. 4Bake at 220 C until the base is crisp and golden.
Serve it like this

Cut into squares or rectangles on a board and serve warm or at room temperature with a green salad.
