Ingredients

Pisco60 ml pisco, or brandy in a pinch
Lemon juice30 ml fresh lime juice
Sugar syrup (simple syrup)20 ml sugar syrup
Egg white1 egg white
Aromatic bitters3 drops
Ice cubesfor shaking

Method

  1. 1Shake the pisco, lime, syrup and egg white without ice.
  2. 2Add ice and shake hard again.
  3. 3Strain into a chilled coupe or small tumbler.
  4. 4Drop the bitters onto the foam.
Serve it like this

Serve in a chilled coupe or small tumbler with a thick foam and bitters. Use very fresh eggs. Ceviche or fried fish alongside.
