Ingredients

Mutton (goat meat)750 g, curry cut
Curd (plain yogurt, natural yoghurt)½ cup
Ginger garlic paste2½ tbsp
Raw papaya (green papaya)2 tbsp, grated
Turmeric (ground turmeric)1 tsp
Kashmiri chilli powder2½ tsp
Saltto taste
Potato4 medium, halved
Mustard oil4 tbsp
Bay leaf (indian bay leaf)2
Whole spices3 cardamom, 3 cloves, 1 inch cinnamon
Onion2 large, sliced
Cumin powder (ground cumin)1½ tsp
Coriander powder (ground coriander)1½ tsp
Sugar1 tsp
Water3 cups
Garam masala½ tsp

Method

5 steps
  1. 1Marinate the mutton with curd, ginger garlic paste, raw papaya, turmeric, chilli powder and salt for 2 hours.
  2. 2Fry the potatoes in mustard oil until golden. Lift out. Add sugar to the oil and let it caramelise, then the bay leaves and whole spices.
  3. 3Add the onions and fry until golden, then the mutton with its marinade. Cook on medium high, stirring, until the masala darkens and oil separates.
  4. 4Add cumin and coriander powder, the potatoes and hot water. Pressure cook for 4 to 5 whistles, then let the pressure release naturally.
  5. 5Simmer open for a few minutes to adjust the consistency. Add garam masala and serve with rice.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
