Ingredients

2 servings
Button mushroom1 punnet, thickly sliced
Butter2 tbsp
Olive oil2 tsp
Garlic3 cloves, sliced
Dried thyme½ tsp
Flat leaf parsleya handful, chopped
Lemon juice1 tsp
Saltto taste
Black pepperplenty
Whole wheat bread (wholemeal bread)2 thick slices, sourdough if possible

Method

4 steps
  1. 1Heat oil and half the butter in a wide pan until foaming. Add the mushrooms in one layer and leave them alone for 3 minutes.
  2. 2Toss, add the rest of the butter, garlic and thyme and cook 2 to 3 minutes more.
  3. 3Season with salt, pepper, lemon and parsley.
  4. 4Toast the bread, pile the mushrooms on and spoon the pan juices over.
Serve it like this

Pile high on thick toast on a warm plate, juices spooned over, extra parsley and black pepper on top.
