Ingredients

Moong dal (split yellow mung beans)1 cup
Fish1 rohu head, cut
Turmeric (ground turmeric)1 tsp
Saltto taste
Mustard oil2½ tbsp
Bay leaf (indian bay leaf)2
Cumin seeds1 tsp
Dried red chilli2
Ginger2.5 cm, ground
Sugar1 tsp
Green chilli2, slit
Water4 cups
Ghee1 tsp
Garam masalaa pinch

Method

5 steps
  1. 1Dry roast the moong dal on medium heat, stirring.
  2. 2Wash the dal and boil with water and half the turmeric until soft but holding shape.
  3. 3Rub the fish head with turmeric and salt and fry in mustard oil until crisp. Break into pieces.
  4. 4In the same oil, temper bay leaves, cumin and dried chillies. Add ginger, then the dal, salt, sugar and green chillies.
  5. 5Add the fish head pieces and simmer for 5 minutes. Finish with ghee and garam masala.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
