Chicken, curry cut (bone in chicken, small pieces)1.2 kg, on the bone

Dried red chilli2 small hot chillies, or 1 chipotle
Tomato2, charred
Onion1, charred
Garlic4 cloves
Almonds¼ cup
Peanuts¼ cup
Sesame seeds3 tbsp, plus extra to garnish
Raisins3 tbsp
White bread1 slice
Corn tortilla1 stale tortilla
Cinnamon1 stick
Whole spices4 cloves, 1/2 tsp peppercorns, 1/2 tsp aniseed
Dark chocolate (bittersweet chocolate)60 g Mexican or dark chocolate
Sugar1 tbsp
Cooking oil (vegetable oil)4 tbsp
Water4 cups chicken stock

- 1Poach the chicken in salted water for 30 minutes. Keep the stock.
- 2Toast the chillies, seed them and soak in hot stock for 20 minutes.
- 3Fry almonds, peanuts, sesame, raisins, bread, tortilla and spices in oil one after another until golden. Raisins puff.
- 4Blend chillies, fried mix, charred tomato, onion and garlic with stock into a very smooth paste.
- 5Fry the paste in 2 tbsp oil, stirring, for 10 minutes. Add chocolate, sugar, salt and stock to make a sauce that coats a spoon. Simmer 30 minutes.
- 6Add the chicken and simmer 10 minutes. Serve with sesame scattered on top.
