Stone ground tea

Matcha is green tea ground to a fine powder, the same tea whisked in the Japanese tea ceremony. Bakers in Japan fold it into sponges and creams, and a green swirl roll is a familiar sight in cake shops.

Good matcha is bright green, not khaki.
