Bloom's masala chai old fashioned.

Ingredients

1 servings
Bourbon60 ml bourbon or Indian whisky
Tea leaves (black tea leaves)1 tsp CTC tea
Whole spices2 cardamom pods, 2 cloves, a small piece of cinnamon, 3 peppercorns
Ginger1 thin slice
Sugar2 tsp, or jaggery
Water40 ml
Aromatic bitters1 dash
Orange1 strip orange peel
Ice cubes1 large cube

Method

4 steps
  1. 1Simmer the water, crushed spices, ginger and sugar for 3 minutes, then add the tea and simmer 1 minute more.
  2. 2Strain and cool the syrup completely.
  3. 3Stir the whisky, chai syrup and bitters with ice for 30 seconds.
  4. 4Strain over a large cube and twist the orange peel over the top.
Serve it like this

Serve in a heavy rocks glass over one large cube with an orange twist and a cardamom pod. Pakoras or Parle G style biscuits alongside.
