Classic Norwegian lapskaus.

Ingredients

6 servings
Beef600 g stewing beef, cubed
Bacon (streaky rashers, streaky bacon)100 g salted pork or bacon, diced
Butter2 tbsp
Maida (all-purpose flour, plain flour)2 tbsp
Onion2, chopped
Beef stock (beef broth)4 cups
Bay leaf (indian bay leaf)2
Potato6 medium, cubed
Carrot3, cubed
Swede (rutabaga)½ swede, cubed
Leek1, sliced
Black pepper1 tsp
Saltto taste

Method

5 steps
  1. 1Brown the beef and bacon in butter in a heavy pot, then sprinkle over the flour and stir.
  2. 2Add onion, stock and bay. Cover and simmer.
  3. 3Add potatoes, carrot and swede and simmer until some potatoes start to collapse.
  4. 4Stir in the leek for the last 5 minutes, season well with pepper.
  5. 5Serve in bowls with flatbread or crispbread and pickled beetroot.
Serve it like this
