Ingredients

6 servings
Pumpkin2 cups, cubed
Potato2, cubed
Sweet potato1, cubed
Radish (daikon radish, mooli)1, cubed
Brinjal (eggplant, aubergine)2 small, cubed
Raw banana (green plantain)1 small, cubed
Spinach1 cup, chopped
Panch phoron1 tsp
Dried red chilli2
Whole spices1 bay leaf
Ginger2.5 cm, as paste
Turmeric (ground turmeric)¼ tsp
Red chilli powder (indian red chili powder)½ tsp
Cumin powder (ground cumin)½ tsp
Sugar2 tsp
Salt1¼ tsp
Mustard oil2 tbsp
Ghee2 tsp
Water¾ cup

Method

4 steps
  1. 1Heat mustard oil till it smokes lightly, then cool slightly. Add panch phoron, red chilli and bay leaf.
  2. 2Add potato, sweet potato, radish and raw banana. Fry 5 minutes.
  3. 3Add pumpkin, brinjal, ginger and powders, then water and salt. Cover and cook 15 minutes.
  4. 4Add spinach and sugar and cook 3 minutes. Finish with ghee.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
