Ingredients

4 servings
Prawns (shrimp)400 g, cleaned
Onion2 large, finely chopped
Tomato3 medium, chopped
Garlic8 cloves, crushed
Kashmiri chilli powder2½ tsp
Cumin powder (ground cumin)1 tsp
Turmeric (ground turmeric)½ tsp
Jaggery2 tbsp
Vinegar2 tbsp
Cooking oil (vegetable oil)3 tbsp
Coriander leaves (cilantro)a handful
Saltto taste

Method

4 steps
  1. 1Rub prawns with turmeric and salt.
  2. 2Heat oil and cook onions slowly until deep golden, then add garlic.
  3. 3Add tomatoes, chilli and cumin powder and cook until thick and jammy.
  4. 4Add jaggery and vinegar, then prawns. Cook 4 to 5 minutes until pink. Finish with coriander.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
