Ingredients

5 servings
Mutton (goat meat)500 g lamb, small cubes
Chana dal (split chickpeas)⅔ cup yellow split peas or chana dal
Onion2, sliced
Tomato puree¼ cup tomato paste
Dried lime2 dried limes, pierced
Turmeric (ground turmeric)½ tsp
Cinnamon¼ tsp
Saffrona pinch, bloomed
Cooking oil (vegetable oil)for stew and frying potatoes
Potato2, cut in thin straws
Saltto taste
Water4 cups

Method

4 steps
  1. 1Brown onion in oil, add lamb and turmeric and sear.
  2. 2Stir in tomato paste and cinnamon for 2 minutes, then add water and dried limes. Simmer covered 45 minutes.
  3. 3Add split peas and simmer until soft but whole, about 40 minutes. Finish with saffron.
  4. 4Fry potato straws until crisp and pile on top just before serving.
Serve it like this

Ladle into a bowl, pile fries on top and serve beside saffron rice with tahdig, plus Shirazi salad.
