Ingredients

Toor dal (split pigeon peas)⅓ cup
Sweet potato1 small, cubed
Raw banana (green plantain)1, cubed
Pumpkin1 cup, cubed
Drumstick (moringa pods)2, in pieces
Elephant foot yam½ cup, cubed
Sweet corn kernels (corn kernels)1 cob, in rounds
Green beans½ cup
Fresh grated coconut1¼ cups
Dried red chilli5 dried red chillies
Coriander seeds2 tsp
Tirphal5 to 6 tirphal, seeds removed
Tamarinda small piece
Jaggery2 tsp
Turmeric (ground turmeric)½ tsp
Coconut oil1 tbsp
Saltto taste
Water3¾ cups

Method

5 steps
  1. 1Pressure cook toor dal with turmeric and 1 1/2 cups water for 3 whistles. Mash lightly.
  2. 2Cook the harder vegetables, yam, drumstick, corn, raw banana and beans, in water with salt until half done, then add pumpkin and sweet potato and cook until tender.
  3. 3Roast the dried chillies and coriander seeds and grind with coconut and tamarind to a fine paste.
  4. 4Add dal, paste and jaggery to the vegetables and simmer 10 minutes. Lightly crush the tirphal and drop it in, cover and simmer 2 more minutes.
  5. 5Finish with a drizzle of coconut oil.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
