Kaffir lime leaves (makrut lime leaves)5

Shrimp paste2 tsp
Cooking oil (vegetable oil)1½ tbsp
Thick coconut milk1¼ cups
Chicken, curry cut (bone in chicken, small pieces)1 kg bone in pieces
Thin coconut milk1⅔ cups

Palm sugar (gula melaka)1 tbsp

- 1Pound the lemongrass, galangal, turmeric, lime leaves, garlic, shallots and chillies into red kroeung.
- 2Fry the kroeung and shrimp paste in the oil with half the coconut cream for 5 minutes until the oil separates.
- 3Add the chicken and coat, then the thin coconut milk. Simmer 20 minutes.
- 4Add the sweet potato and onion for 10 minutes, then the beans and eggplant for 7 minutes, until the chicken shows no pink at the bone.
- 5Stir in the rest of the coconut cream, fish sauce, palm sugar and salt.
Serve it like thisServe in a deep bowl with crusty baguette, rice or rice noodles alongside, and lime wedges.
