Classic kala jamun.

Ingredients

8 servings
Khoa1 cup, soft
Chhena¼ cup
Maida (all-purpose flour, plain flour)3 tbsp
Baking soda (bicarb soda, bicarbonate of soda)a pinch
Sugar30 g in the dough, 300 g for syrup
Water1½ cups
Gheefor frying, about this much is absorbed
Cardamom¼ tsp

Method

4 steps
  1. 1Knead khoa, chhena, maida, soda and 30 g sugar into a soft dough.
  2. 2Shape 16 smooth balls or ovals.
  3. 3Fry on low heat for 15 minutes, turning, until almost black.
  4. 4Soak in a warm syrup made with the remaining sugar, water and cardamom for 2 hours.
Serve it like this

Serve two in a small bowl, halved to show the paler centre, with a spoon of syrup.
