Ingredients

3 servings
Egg4, separated
Maida (all-purpose flour, plain flour)1 cup
Milk1 cup
Sugar3 tbsp plus 1 tbsp for caramelising
Raisins¼ cup, soaked
Butter3 tbsp
Vanilla essence (vanilla flavouring, imitation vanilla extract)½ tsp
Salta pinch
Fruit jam (jam or preserves)plum or apple compote, to serve

Method

5 steps
  1. 1Whisk yolks, milk, flour, vanilla and salt into a smooth batter.
  2. 2Whip the whites with 2 tbsp sugar to firm peaks and fold into the batter.
  3. 3Melt half the butter in a large pan, pour in the batter, scatter raisins and cook on medium low 4 minutes until the base is golden.
  4. 4Cut into quarters, flip each, add remaining butter and tear into bite sized pieces with two forks.
  5. 5Sprinkle the rest of the sugar and toss for 1 minute to caramelise. Serve with compote.
Serve it like this

Serve straight from the pan or piled on plates, heavily dusted with sugar, with a bowl of plum compote alongside.
