The classic Irish coffee.

Ingredients

Whisky (whiskey, scotch whisky)40 ml Irish whiskey
Espresso120 ml hot, strong brewed coffee
Sugar2 tsp brown sugar
Fresh cream (thickened cream, heavy cream)30 ml cream, lightly whipped

Method

  1. 1Warm a heatproof glass with hot water, then empty it.
  2. 2Stir the sugar into the hot coffee until dissolved, then add the whiskey.
  3. 3Whisk the cream until just thickened, like melted ice cream.
  4. 4Pour the cream slowly over the back of a spoon onto the coffee.
Serve it like this

Serve hot in a stemmed heatproof glass with a neat layer of cream on top. Sip through the cream. Biscuits or a slice of cake alongside.
