Ingredients

Egg5
Carrot2 tbsp, very finely diced
Spring onion (green onion, scallion)2, finely chopped
Onion2 tbsp, finely diced
Salta pinch
Cooking oil (vegetable oil)2 tsp

Method

5 steps
  1. 1Beat the eggs with salt until smooth, then stir in the carrot, spring onion and onion.
  2. 2Oil a non stick pan over low heat and pour in a third of the egg in a thin layer.
  3. 3When the top is almost set, roll it from one end to the other with a spatula. Push the roll to the far end.
  4. 4Pour in more egg, lift the roll to let it flow underneath, then roll back. Repeat until all the egg is used.
  5. 5Rest 3 minutes, then slice into 2 cm rounds.
Serve it like this

Arrange the rounds cut side up on a small plate with ketchup for dipping, or line them up in a lunchbox beside rice and kimchi.
