Ingredients

3 servings
Whole wheat flour (wholemeal atta flour, chapati flour)2 cups
Salt¾ tsp
Waterabout 2/3 cup, as needed
Fresh grated coconut1 cup

Method

5 steps
  1. 1Dry roast the wheat flour on low heat, stirring, for 6 to 8 minutes. Cool.
  2. 2Sprinkle in the salted water a little at a time, rubbing with your fingertips, until the flour is like damp breadcrumbs. Pulse once in a mixer to break up lumps and rest for 10 minutes.
  3. 3Bring water to a boil in the puttu kudam. Fill the puttu kutti with a spoon of coconut, then wheat crumbs, then coconut again, finishing with coconut. Do not press down.
  4. 4Fit the kutti on the kudam and steam until steam streams out of the lid, then 2 minutes more.
  5. 5Push the puttu out with the stick and serve hot.
Serve it like this

Push onto a plate, break open with a spoon and serve with kadala curry, or with mashed ripe banana and a little sugar.
