St Louis gooey butter cake.

Ingredients

12 servings
Maida (all-purpose flour, plain flour)2¾ cups, divided
Instant dry yeast1½ tsp
Sugar3 tbsp for base, 1 1/2 cups for topping, plus dusting
Milk⅔ cup, divided
Butter1 cup plus 2 tbsp, soft, divided
Egg2, divided
Salta pinch
Golden syrup (golden syrup or light corn syrup)2 tbsp, or corn syrup
Vanilla essence (vanilla flavouring, imitation vanilla extract)1 tsp

Method

5 steps
  1. 1Mix 200 g flour, yeast, 3 tbsp sugar, salt, 80 ml warm milk, 70 g butter and 1 egg into a soft dough. Knead 5 minutes.
  2. 2Press into a greased 23 x 33 cm pan, cover and rise 45 minutes.
  3. 3Beat the remaining butter and sugar until fluffy, then the second egg, syrup, vanilla, remaining milk and flour.
  4. 4Spread over the risen dough and bake at 180°C for 25 to 30 minutes until golden but wobbly in the middle.
  5. 5Cool in the pan and dust with powdered sugar before cutting.
Serve it like this

Cut into small squares and dust with more powdered sugar. Serve at room temperature with coffee.
